Breakfast Muffins


This is the easiest toddler breakfast I have ever made. 
Vida loves to eat eggs. They can be scrambled, fried, hard boiled or poached, It doesn't matter she will inhale them. 
I decided to make these egg muffins and add lots of veggies to make them even 
more healthy for her. 
Some recipes say to cook the onions and spinach before baking but I decided just to cook the ham in coconut oil and leave all the veggies raw. 
I like the crunch of the onion in the fluffy egg muffin.

Breakfast Egg Muffins

Ingredients
12 Eggs (you can use only egg whites too)
1/2 cup mushrooms 
1/2 cup chopped cooked ham
1/2 cup chopped spinach 
1/3 cup chopped kale 
1/3 cup chopped tomato
1/2 cup chopped onion 
1/4 cup chopped green pepper 
1/2 cup of cheese (optional) 
1 pinch of pink salt and a little garlic 

Mix eggs until well blended.
Add all ingredients together and scoop into a lightly greased muffin pan.

Bake at 350 for 20 minutes

I filled mine all the way to the top and made 12 egg muffins. 
Feel free to mix this egg muffin recipe up a bit. 
Add more ingredients or less, add bacon or sausage, it's up to you. 
The possibilities are endless..

You can also freeze these muffins and eat them later which is a total lifesaver on busy mornings.
