Canada Day & Blueberry Picking

Happy Canada Day



Happy Birthday to the best Country in the world!

We celebrated with pancakes and Canadian maple syrup in the morning and spent the afternoon at a local farm picking blueberries with some sweet friends.



 Vida ate more than picked so it was like double the work.

We went home and made delicious Blueberry Cobbler with fresh 
homemade whipped cream!! 
It was a heaven in a bowl.


Blueberry Cobbler Recipe
ingredients
  • 3 or 4 cups of blueberries
  • 1/2 cup sugar
  • 2 cups all purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/2 cup of coconut oil (optional,can use butter)
  • 1tbs baking powder
  • Cinnamon
Preheat oven to 350 degrees
In a glass baking dish mix blueberries and sugar, coat to cover.
In a separate bowl combine all dry ingredients together once mixed 
add all the wet ingredients. 
pour batter over blueberries and mix well.
Sprinkle cinnamon on top and bake for 25-30 minutes

Homemade Whipped Cream
  • 1 cup organic heavy whipping cream (optional, but organic just tastes soooo much better)
  • 3-4tbs  sugar (some recipes say 1-2 but to me it's not sweet enough) 
  • Chill egg beaters and a bowl in the freezer for 10mins
Beat cream for 3-4 minutes, slowly add sugar 1 tbs at a time. 
Taste as you go along to determine the sweetness.
